Philosophy of working with wine
Our goal in the cellar husbandry is great wine with personality, in which you find terroir of the soil, from which the grapes grow. We use our own technology, gained from proven past generations of winemakers, whose basic principle is to preserve in wine,through natural steps, what the grape obtains in the vineyard. We do not use any artificial or unnatural elements during making of our wine. The foundation of making our wine is a healthy and ripe grape. We papmer the grape. The harvest is exclusively hby hand, because it is friendlier to the grape than machine harvesting and it allows us to select the right grapes for our great wines right there on the vineyards. Our vineyards are located in Mikulov, only few hundred meters off our vinery and that allows us fast processing of grapes.
After considerate grape processing in stalk mill follows, based on the variety, either direct pressing or maceration and then pressing. After that we supervise alcoholic fermentation with focus on preserving the natural aromatic elements in wine. After first bottling we do not disturb the wine and allow it to determine itself naturally. Wine matures on soft sediment, using the batonage or even more strict sur-lie methods. The sulfur we use only when necessary and wine matures practically without sulfur. These naturally evolving wines to settle and rest after bottling for 3 to 5 months before reaching our customers. Wines are prepared for several years of archiving in bottle into beautiful extent.
